I'm not sure whether SFTPFS would be good for this or not; for this kind
of semi-interactive usage.
I would recommend using a program called unison to replicate the data
instead. It's basically rsync, but supports multi-master replication, so
all sites can change the data content. Of course, it only support
multi-master at the file level, not within a file (for automatic
replication without manual conflict resolution using an external
diff/merge tool at least.)
